There's something about Baby Lamb Chops that's just irresistible and I couldn't have decided to start off this blog with anything but the best! This delicious, tender baby lamb chop recipe is sure to be a winner at your next dinner table so look no further!

I bought this spice from a middle eastern grocery shop during my visit to Amsterdam. If you can't find the same brand here in the US, you can make your own by simply combining the list of spices used which include the following: Salt, Pepper, Ground Ginger, Cumin, Turmeric, and Wheat Starch.

So let's get the party started!

Ingredients:

- 1 Rack of Baby Lamb Chops

- 2 cups of Parboiled Long Grain Rice (I used Carolina)

- Lamb Spice Seasoning OR a mix of the following (1- 1/2tsp of the following: salt, pepper, cumin, ground ginger, turmeric and wheat starch)

- 1 packet of Sazon seasoning

- Olive Oil

- Cilantro

- 2 Roma Tomatos

- 1 small white onion

- 2 green peppers (as pictured above OR jalapeño)

- Salt and Pepper to taste

Steps:

1. Marinate the meat. Clean and dry the chops very well. In a large bowl, mix the lamb chops with the spice seasoning and olive oil and set aside.

2. Wash the rice very well and drain out the water. Pour the rice in the rice cooker pot, add in the sazon packet, 1 tbs of sea salt, 2 tbs of olive oil and mix well. Add in water (3-4 cups deepening on your rice type. Close and let cook!

3. Heat up your cast iron pan. Add about a tablespoon of olive oil on the pan and once heated, cook the lamb chops about 2 - 3 mins per side. Once the chops are done, add in the veggies and grill till charred.

4. Once the rice is done, plate it with the lamb chops and veggies and add some cilantro for garnish and Enjoy!
