Saag With Chingri (Spinach with Shrimp - The Bengali Way)


Hey guys! So sorry I've disappeared for a while, life can definitely get in the way of posting up these delicious recipes. So without much talk today, I wanted to share a very simple, super authentic Bengali dish that is a part of every bengali home's everyday meal side dish and it's called, saag with chingri mach (spinach with shrimp). So here it goes!!

(Saute some onion, garlic and red chili, before adding in marinated shrimp (for the shrimp marination I used turmeric, red chili powder and salt).

Ingredients:

- handful of shrimp (or as less or many as you like)

- 1 bunch Spinach washed well and dried

- 1 small white onion

- 3-4 dried red chilies

- 2 cloves of garlic sliced

- 3-4 green chilies

- 1/2 tsp turmeric (or little more)

- 1/2 tsp red chili powder (or little more)

- 3-4 Tbsp of regular oil

- salt to taste

Directions:

1. Clean the shrimp well, dry and mix with salt, turmeric and red chili powder and keep aside.

2. Wash the Spinach very well and dry to make sure there is no water retantion left in it.

3. Heat a pan with oil until hot, but not smoking. Add in the onion, red chili and garlic slices and sauté for few mins until onion is translucent, garlic slight brown and the red chili's crispy.

4. Add in the marinated shrimp and sauté about 1-2 mins aside based off how big the shrimp are (smaller shrimp will take less time and you do not want to over cook the shrimp).

5. Finally, add in the spinach, fresh green chilies and a little more salt if needed. Stir well and cook in high heat. If spinach releases water, make sure to cook it in high flame until most of the water evaporates.

6. And you're all done! As Bengali's we eat this with hot white rice. Enjoy! :)
